The way I understand it Anyanka (the demon's name) drew her power from an amulet she wore around her neck. She used it to take human form in order to gain Cordelia's trust so she could trick her into wishing for vengeance (that Buffy never came to Sunnydale). When Giles destroyed the amulet, it left Anyanka in the human form she had assumed. I guess Anyanka didn't sound human so she adopted the name Anya. Hope this helps.
