Same reason the sunlight and fire and stakes and beheading rules all still
apply to him. He may be a *nice* vampire (i.e. having a soul, always a plus
point) but he is still clinically undead and still has a demon inside him. He
is still a dangerous person who wants to eat you - hold up on the
rock-throwing 'til I'm finished, I think it's pretty obvious that he still
has a pretty big bloodlust - but having a soul means he has some control over
it rather than being completely evil like a vampire such as Spike, for
instance. Also, you have to remember - this just occurred to me - that all
the demons walking the earth are tainted with Human blood etc. anyway, so
Angel having a soul is just a different proportion of that in a way. He's
still got all the vampire instincts that make him dangerous, he just denies
them and restrains himself - with difficulty, at times.
