Nathan,

Entirely a joke by Joss on the differences between movie Buffy (senior)
and series Buffy (sophomore). Neither date is to be taken seriously, as
the 1981 birthdate is established as early as the tombstone in
"Nightmares". "Innocence" places it in January (because it's notably
before the Valentine's day seen in "Bewitched, Bothered and
Bewildered"), and "Doomed" limits it to one of a couple of days, when
Buffy tells Riley she's a "Capricorn on the cusp of Aquarius".

An analysis of "Surprise"/"Innocence" seems to pinpoint January 20th,
1981 as the actual birthdate. (In a completely useless coincidence, that
was the day President Reagan was inaugurated.)

Anyway, the tombstone in "The Gift" also says 1981, so the dates seen in
those frames can be completely diseregarded. (I'm also betting Buffy's
had more than one absence, too.)
