I assume that you use Microsoft Word (or a similar product) to write
your fic then copy and paste into the mail.

In Word. under Tools|Autocorrect click on the 'Auto Format as you
type' tab and make sure that in the 'Replace as you type' section
'"Straight quotes" with "Smart Quotes"' is unchecked. You might want
to uncheck all of the rest of the options under that section as well
to be on the safe side. Characters like Smart Quotes are part of the
extended character set which vary from font to font and tend to get
mangled when they're sent over the Internet.
