It's just an in-joke, nothing more. They printed up the two different
birthdays side-by-side like that as a joke about the differences between
MovieBuffy (who was a senior) and TVBuffy (who was a sophomore). 

Nor is the Sophomore page, with the October, 1980 birthdate to be taken
as canon, either. 1981 was established as Buffy's year of birth as
early as the tombstone in "Nightmares", just two episodes down the line.
And Joss had pretty much planned the Season 2 arc, with the midseason
(therefore [N. Hemisphere] winter) birthday included, at that point.

Buffy's birthdate is indeed in January, 1981. The 20th or the 21st,
according to the astrological reference in "Doomed" ("Capricorn on the
cusp of Aquarius"). IMO, mostly likely the 20th, according to my
analysis of the events of "Surprise" and "Innocence".

Xander's birthday is sometime between October 10th ("Reptile Boy", where
he's "16 and a half") and January 22nd ("Innocence", where he's 17). 

Cordelia's is May 22nd, according to "The Prodigal" (no, I don't know
what "Birthday" was doing airing in January, but I'm not giving up on
Cordy as a fellow Gemini that easily. Since the rest of the "Angel"
season took place over relatively little time, I'm just saying it WAS
May in "Birthday" and being stubborn about it. So there :p). 

Dawn's is sometime during the summer (14 in Season 5, 15 in S6), Tara's
is sometime in the fall ("Family" aired in November, but Buffy had just
moved into her dorm room "a few days ago", so I assume it's closer to
the start of classes), and I have no idea about Giles and Willow.

still perfectly fine, and neither Buffy nor Xander is an insane
murderer, so still not exactly the same thing...)
