In total agreement with you, although you said the last three years. You include season five? Season Sux spoke for itself, and seven was a bunch of cool ideas buried under Spuffyness. I enjoyed the story of Glory and her Key (although it probably would have been 100% better had they dropped the valley girl act and shown us a real DARK GODDESS, but I digress) In fact, I thought "The Gift" was an almost ideal place to end the show. It may bloody well be that there was simply no more story to tell after that, and that may have contribute to the general lameness of the last couple of years. 

What are your thoughts on season five?

The really sad thing? The majority of Buffy fans BOUGHT it! They LOVED Spuffy and seemed rather indifferent to loose all the things that made the show meaningful.
