BHV has a good point

now my series (as slow as I am to update it...) only takes cannon
through season II and then pushes the action 3 years into the future.
Angel isn't an issue cuz he's in hell (or returned and just out of
Buffy's life - don't really care). As for Oz, well I never had him and
Willow breaking up (even had Xander and Cordy reconciling - post
season II, it could have happened their senior year - the wonders of
fiction) - their continuing relationship is actually part of the
storyline and Buffy realizes his importance in Willow's life (although
she wouldn't be upset to see it end ;P - stay tuned for chapter 4 to
see how this shakes out)

now that the series is over - you can insert your story anywhere along
the time line - keep what you want, disreguard the rest. Just keep the
character's true to themselves (ie. cannon has willow with an
addictive personality - shown through magic, but character wise this
may suggest she's be more open to other addictions as well...)

plus even at series end these characters were just in their early 20s
- that's what I think makes them so ease to 'ship in very verying ways
believably. this age group is a time for experimentation and finding
oneself. 

because of the above reason, this is the only fandom where I read
multiple 'ships and love them all (note - not all 'ships, it's just
me, but I can't take Spike 'shipped with anyone, even though I'm sure
there are some fantastic stories out there, just not my cup of
tea...). If the author can create (for me) a believable reason for the
pairing I have no difficulty ignoring cannon to follow their 'new' plot.
