I've read, in an endless number of fics, Willow refered to as Wills. I have no recollection of her ever being called that in the show.
She was called Will all the time but never the plural.

I always just assumed someone created a memorable nickname and others 
took it becaused they liked it. This occasionally happens in the fan 
fic world, sometime  (especially if the stories aren't canon) an 
author creates an image or voice for the character that resonates as 
true, even though it differs from the show. I can think of this with 
Melissa Good's Xena & Gabrielle: A Journey of Soulmates 
http://www.merwolf.com/ffiction.html  (this almost created a new 
genre of fan fiction, and even the producers and writers of Xena 
followed her stories. They were so impressed they asked her to write 
a couple of Xena episodes).  Also Gina Dartt's Just Between Series 
(http://www.northco.net/~janeway/JBSeries/jbindex.htm) did the same 
for Star Trek Voyager.
I would say in the Buffyverse, perhaps Lisa Countryman's Two Witches, 
One Love http://www.quiknet.com/~lcountry/tarawill.html  has had a 
similar, though lesser effect.  For those of those who dream against 
canon, and believe in the power of Buffy/Willow though while I can't 
think of one standout series that has unduly shaped my opinion of the 
characters, there are large number of standout authors who have added 
little touches here and there that sometimes surprise me when they 
aren't in the show itself.
I've always enjoyed Wills as a term of endearment from Buffy to 
Willow.  I would consider Willow's nicknames to be Will or Red, but 
Wills has always been to me, Buffy signifying her need for Willow, so 
a special term of endearment. This is probably due to the first story 
I read that used it. I can't say what story that was now  (I think it 
was the Wolf Within, but I could be wrong), but I do remember 
thinking how sweet, and relating it to times of passion or when Buffy 
needs care from Willow.  I'm not always a fan when stories have a 
slew of characters calling Willow Wills. I prefer just Buffy calling 
her that.
But I think fan fiction has the ability to create worlds that can 
supercede the actually show/series. In fact, I remember when I first 
started reading fan fiction it was in the Xena and Star Trek Voyager 
realms, and boy after running into Melissa and Gina's work, I use to 
totally screw up the actual series timeline for me.  I remember a 
friend asking me for an overview of what was going on once, and after 
totally digressing into the fictional timeline, I then remembered 
that half of what I had told her had never happened on the show. Talk 
about needing the reality of MightyBigTV (now Television Without 
Pity) and TVTome to help me separate.
So for those authors using Wills, keep up the good work...but only 
between Buffy and Willow :)
