I don't know why that is, either.  The Buffy Femmeslash list still has
plenty of activity.  Maybe newer writers just find that one easier to
find than SS?  For the most part, though, I've noticed supporters of
individual pairings mainly post on their own lists, with B/W being
mainly found here, B/F on B'n'F and FC, and the W/T people mainly
staying on their own forums (And, a lot of the Kitten crowd has become
nototious for not playing well with others).  Of course, these days,
just about every even minor pairing has it's own mailing list.  Others
will just post their stuff on ff.net, aff, or the newsgroup.

Not that I've noticed, except for the uberfic (which gets around the
whole demon issue).  The only thing I've noticed in overabundance is
"Xander picks a different Halloween costume" fic.  There's only so
many variations of that before it gets really old, really fast.  Of
course, it's a variation of the ton of "Give Xander all these cool
superpowers and turn him into Marty Stu" fics, which, to me, miss the
entire point of the character (The Everyman without special gifts who
makes a difference).  Mostly, though, you're going to find adventure
stories, there, which really doesn't get into unusual romantic
pairings, much.  

That there was an especially large amount of Spuffy during S6 didn't
surprise me, any more than the abundance of Fuffy during S3 and 4. 
That's to be expected.
