The essential B/W moments for fic writers?

I was hit over the head by a vicious plot bunny last week and
can't seem to focus on any of my other fics right now. And now,
3/4 of the way thru the prologue I'm just not feeling the
"Buffy-ness" in my writing -- and I want it back (assuming I
ever had it...). 

Sure, I'm really just setting the scene/background for the rest
of the fic (a Post Season 6 AU/road trip/crossover) but I still
want Buffy and Willow to have an actual presence in the fic.

So... I'm thinking of going back to the source material/canon
for a dose of Buffy and Willow. But, as I sit here watching
"Welcome to the Hellmouth", I think I could use a little help.
Season 1 Buffy seems to young/innocent for the fic I'm writing. 

With 144 episodes to choose from it would take me weeks to
rewatch them all. And "episode picked at random" probably won't
get me what I want.

So the question before the assembled masses -->

What are the essential (Or at least the top 10) episodes or
moments that define:

- Buffy's character
- Willow's character
- The relationship between Buffy and Willow? The Good parts/The
Bad Part.


Unless that is too broad of a question?
